At Walking R Ranch, we raise only the finest Black Angus cattle, ensuring that our beef is always tender, juicy, and flavorful. Our cattle are free-range and grass-fed, resulting in a healthier and more sustainable product.

My father, Larry Robinson, lived his entire life in the rural area along Highway B west of Montgomery City. From the time he was a child of five, he dreamed of owning open acreage, raising cattle, and building good fences. He worked his entire life to achieve that vision — and, more importantly, to leave that legacy to his family.
I vividly remember the farming crash of the 1980s. As a young teenager, I watched our cattle and most of our working horses sold. Then the farm equipment went, followed by my father’s truck. During that time, he took a part-time job nearby and rode his horse to work so that my mother would still have a vehicle if she needed it. Even through hardship, they pressed on. My mother worked as an artist, and together they showed us the meaning of resilience, discipline, and dignity.
Over time, through persistence and hard work, they rebuilt a larger herd of cattle and repurchased land that had belonged to our family for over 100 years. My father worked every day to improve and maintain the farms, leading by example and teaching us the importance of being good stewards of the land.
My father has since passed away, but my mother still owns the seven farms they assembled in Montgomery County. As a child, I watched firsthand the effort, sacrifice, and determination it took to bring these family farms together.
These lands are rich not only in heritage, but in natural beauty and ecological importance. They contain natural springs, native plants, waterways, and wooded areas that serve as habitat for wildlife, including eagles and brown bats. The soil has not been tilled for crops in at least 70 years, preserving both its structure and its natural balance.
Four of these farms are officially registered Missouri Century Farms, with origins dating back to 1838, 1873, 1883, and 1902.
A restored Union School House, which originally stood on County Line Road, now sits near the main home place. This historic school once served families from both Callaway and Montgomery Counties, located between Big Loutre Creek and Little Loutre Creek so children wouldn’t have to cross the waters during periods of high flow. Notably, my father’s mother taught school in this very building.
Today, the land is still actively used as cattle grassland. Our family continues to enjoy hunting, campouts, horseback riding, and all that nature has to offer. One of the grandsons, Keith Struby, has continued the cattle operation using the registered brand my father created in 1960.
We are the stewards of this land, and we strongly oppose its use in any way that does not honor its health, history, and long-term value.

At Walking R Ranch, every cut of beef is expertly aged to achieve optimal tenderness, texture, and flavor. Unlike most supermarket beef, which is typically processed and shipped within days, our beef is given the time and conditions necessary for natural enzymatic and biochemical improvements to occur.
After harvest, naturally occurring enzymes such as calpains and cathepsins begin to break down muscle fibers and connective tissue within the meat. This controlled enzymatic activity gradually reduces toughness and improves mouthfeel, resulting in a more tender and buttery texture. Properly managed aging enhances tenderness without compromising the structural integrity of the meat.
As the beef ages, controlled moisture loss occurs. This mild dehydration process concentrates the remaining muscle fibers’ natural flavors and increases umami intensity. The result is a richer, more complex flavor profile that’s often described as nutty, beefy, and slightly sweet—characteristics prized by chefs and discerning consumers alike
Our beef is aged under strict USDA-approved conditions at a family-owned facility that has been operating for over 56 years. Temperature, humidity, and airflow are precisely regulated to prevent spoilage while allowing the meat’s natural biochemistry to work. This ensures consistent results across every cut and batch.
Most supermarket beef undergoes minimal or no aging. It’s vacuum-packed and distributed rapidly to minimize shrinkage and weight loss—factors that are financially important to large-scale operations but detrimental to flavor and tenderness. In contrast, Walking R Ranch beef is deliberately aged to optimize eating quality, not just efficiency. The difference is immediately noticeable in both texture and taste.
Aging is not a marketing claim—it’s a controlled, scientific process that transforms good beef into exceptional beef. By combining time-honored ranching practices with precise post-harvest handling, Walking R Ranch delivers beef with superior tenderness, depth of flavor, and consistency that mass-produced supermarket meat simply cannot match.
